Mediterranean salad with Salad dressing with Balsamic Vinegar and Grove 100% New Zealand Avocado Oil

   

People who live in the Mediterranean have long lives due to the good food they eat which is rich in Omega rich Oils such as Olive, Avocados. It is well known that a Mediterranean diet is good for you.

I am going to prepare a Mediterranean salad for our Salad dressing.


2 x Red peppers
2 x Green Peppers
4-5 Eggplants (depending on size)
6-10 small button Mushrooms
3-4 Zucchinis
5-6 Cloves of Garlic
Green Olives (pitted optional)
Sesame seeds 2-3 tablespoons

 

Take all your vegetables and wash with a good quality vegetable washing liquid.

Take your Red and Green peppers and remove the seeds and then slice into large pieces.

Slice the Eggplant into good sized pieces

Cut the mushrooms into quarters

Slice the zucchinis

Peel and then cut your garlic in half, you can add as much garlic as you like

Take a large pan or Wok and over a medium heat dry roast/fry your red and green peppers until they start to soften, remove and put in large salad bowl.

Use about 2 tablespoon of and Grove 100% New Zealand Avocado Oil and add to the pan/wok and add the eggplant and fry until they start to brown, note that the eggplant will suck up the Oil so you may need to add a little more during cooking. Add a pinch of salt while cooking.

When done add to the bowl with the Red and Green Peppers.

Take your Garlic and dry fry until they are softening and a little brown then add to the bowl then add the rest of the vegetables’ to the mix

Add olives and sesame seeds, pepper and while still warm add the Balsamic Vinegar Grove 100% New Zealand Avocado Oil , mix thoroughly and let sit, you can refrigerate to keep prior to serving or serve straight away slightly warm.

A great tasty healthy salad with a great aroma and taste!
